
Online Cooking Classes
With Chef Yves Rossi.
What Masked Lemon includes:
An inspiring one month online cooking class with 4 live lessons per year. Taught by Yves Rossi, a Swiss and Canadian Red Seal certified chef who has been working at Boccalino Restaurant in Kootenay Bay, BC, since 2010.
Each participant gets his weekly shopping and prepping list, 2-3 recipes (in metric) plus video instructions 5 days ahead of each lesson. Every dish will be made from scratch with seasonal, sustainable and local ingredients and will include salad dressings, sauces, soups, stocks, desserts and more. It’s up to each participant to hire his/her partner as sous chef, extra help will come in handy.
Yves will teach all knife skills and cooking techniques necessary to complete the course, give tips regarding waste reduction, proper handling of food storage as well as give an introduction into modern Bistronomie plating styles.
At the beginning of the second, third and fourth lesson will be an up to 15 minute Q & A section added on to the 1.5 hour online class to discuss subjects learned during the previous lesson only. After that the participants will be muted and cook live along Yves according to his instructions. Each participant will receive a Certificate from Masked Lemon at the end of the school.
What Masked Lemon requires from you:
Intermediate knowledge of cooking, knife skills and food safety like food storage and handling as well as dress codes (long pants and non-slipping closed shoes). This is an online class during which your volume will be turned off except for the Q & A section and therefore Yves won’t be able to hear you.
It is your responsibility to be ready for class with all required ingredients and prepped items in place. Yves won’t be able to change up the recipes or the lesson if you’re late or not ready, have a poor internet connection or haven’t followed his instructions regarding the shopping or prepping list.
At this time Masked Lemon doesn’t teach any vegan, vegetarian or gluten free classes but accepts inquiries about future ones by email. Please advise if you have any allergies so that Masked Lemon can determine how to proceed in every individual case.
Masked Lemon is also planning to teach in the future in different time zones in French and German as well as English. Please inquire if you are interested.

Hi everyone,
After working for 30 years as a chef I have decided to pass on some of my cooking skills and therefore would like to introduce you to my cooking school “Masked Lemon”.
The idea emerged when I was on vacation with my partner in the Caribbean. After two days there I already had my first student who even followed me to the Kootenays one year later to get a one week cooking course from me. And from there on and over the years I taught from school kids up to all ages for free in the Boccalino kitchen.
I think that in these challenging times online teaching is probably the best way to meet people who share the same passion for food.
